Mole:  A Mexican Tradition
One legend of Mole begins in the 16th century, when nuns from the Convent of Santa Rosa in Puebla de los Angeles went into a panic upon hearing the Archbishop was coming for a visit because they had nothing to serve him. As they started praying desperately, an angel came to inspire them.  They began chopping and grinding and roasting, mixing different types of chiles together with spices, day-old bread, nuts, a little chocolate and approximately 20 other ingredients.
The concoction boiled for hours, was reduced to a thick, sweet and fragrant sauce and poured over an old turkey, the only meat they had.  The Archbishop was thrilled with his meal, and so was created the Mexican National dish for holidays and feasts, and the inspiration for our delicious new Zocalo Cafe Mole.
